Excellent way to get bulgur wheat into your diet. The original recipe uses chicken breast. The recipe calls for chicken breast, but I use ground turkey instead.

Recipe Ingredients for Turkish Pilaf w/Turkey

1/4 cup lentils
1 cup cracked bulgur wheat
1/2 cup currants
2 tbsp olive oil
6 oz. portabello mushroom
1 3/10 lb. ground turkey
1/4 cup butter
12 oz. carrots
10 oz. red onion
2/3 cup fat free chicken broth
3/4 oz. cilantro
1 tbsp coriander seeds
1/2 tsp cloves
1/2 tsp ground cinnamon
1/2 tsp ground cardamom

Recipe Directions for Turkish Pilaf w/Turkey

  1. Drain the lentils, cover them with water in a saucepan, bring to a boil, and simmer until soft.

  2. Meanwhile, place the bulgur and currants in a bowl and just cover them with boiling water. Set to one side for about 10 minutes to allow the bulgur to absorb the water.

  3. Dry-roast the coriander seeds and cloves until aromatic, then grind to a powder. Combine them with the remaining spices and set to one side.

  4. In a wok, heat the olive oil and add the pine nuts, turning frequently. When golden, remove them from the wok and set to one side. Saute the turkey (or chicken) strips in the wok until golden.Add the butter and when it has melted, add the carrots an donion and saute them until soft. Add the spice mixture, the drained cooked lentils, then teh bulgur wheat, the currants and the stock. Sir well, cover the wok, reduce the heat and gently steam for five minutes.

  5. Finally, add the flat-leaf parsley.

  6. Serve immediately with yogurt mixed with chopped fresh mint, salt and pepper and a crunchy green salad.
