Turkish Lentils Recipe

A nice way to ease into the Turkish tradition of long-cooked vegetables, which come out flavourful and crisp despite fairly long cooking times.

Recipe Ingredients for Turkish Lentils

4 cup, chopped Carrots
3 small Onions
4 clove Garlic
3 tbsp Olive Oil

Recipe Directions for Turkish Lentils

  1. Cook the lentils for about 20 minutes.

  2. Chop the carrots into thin rounds.

  3. Sauté the onion in a tsp of olive oil until nearly brown, with allspice and cardamom to taste.

  4. Add the garlic, and sauté for 20 seconds, then immediately add the cooked lentils and the carrots.

  5. Add water to nearly the level of the vegetables, and allow to simmer until the water is nearly gone, stirring occasionally, and more frequently toward the end.

  6. Dress with the rest of the olive oil, and perhaps some lemon juice. Server warm or cold.
