Turkish Lentil and Sweet Potato Soup

Recipe Ingredients for Turkish Lentil and Sweet Potato Soup

1 large onion, diced
2 cloves garlic, crushed
1 tbsp olive oil
1 tsp cumin
1 tsp paprika
1/4 tsp dried chili
250 grams sweet potato
250 grams green lentils
1000 ml water
1 tsp lemon juice

Recipe Directions for Turkish Lentil and Sweet Potato Soup

  1. Finely chop one onion and sweat it gently in a good glug of olive oil for a few minutes.

  2. Add one clove of crushed garlic, a sprinkling of paprika and cumin, salt and black pepper and saute for a few more minutes just to let the onion take on the flavours.

  3. Add chili flakes and stir.

  4. Add green lentils and stir for about 5 minutes.

  5. Add sweet potato.water water, stir, bring to the boil and then cover and simmer on a low heat for 45 minutes or until the lentils are soft. You might need to add more water so just check occasionally.

  6. Allow to cool and puree, leaving some lentils whole for texture.

  7. Add lemon juice before serving - it somewhat replaces the need for salt.

  8. Season as necessary with salt and pepper.
