This is one of masses of recipes for this very typical Turkish soup. It is usually served with lemon wedges to squeeze yourself; I've given the lemon juice for counting's sake.

Recipe Ingredients for Turkish lentil soup

1 onion, chopped
1 tbsp vegetable oil
2 tsp cumin
2 tbsp tomato paste
2 tsp salt
1 tsp pepper
2 cups red lentils
2 l water
2 medium carrots, roughly chopped
2 medium potatoes, roughly chopped
2 tbsp lemon juice
1 cup parsley, chopped

Recipe Directions for Turkish lentil soup

  1. Fry the onion in the oil until soft, add cumin and fry until fragrant. Add tomato paste and some of the water until paste is dissolved.

  2. Add the lentils and water, carrots, and potatoes. Cook until the lentils and vegetables are very soft, about 25 minutes.

  3. Blend the soup, add salt and pepper and finish with lemon juice to taste. Or serve with lemon wegdes. Stir parsley in just before serving.
