Lamb chunks in rice with dried apricots

Recipe Ingredients for Turkish Lamb Pilaf with Apricots

1 1/5 g Pam Professional
1 lb lamb chunks
2 large onions
2 c brown basmati rice
794 g diced tomatoes
1/4 c apricots dried
2 t salt
1 t pepper
1 t sage
1 t allspice
4 c college Inn chicken stock
2 c water

Recipe Directions for Turkish Lamb Pilaf with Apricots

  1. saute lamb with PAM

  2. remove lamb from pan

  3. cook onions in pan until soft but not brown

  4. add rice and cook for 5 minutes

  5. add remainder of ingredients (not lamb)

  6. cook over lowest heat until rice is tender (~45min)

  7. add water as necessary (1-2c)

  8. return lamb to dish to heat up

  9. set dish to side for 10-15 minutes

  10. sprinkle with optional parsley or mint
