Turkish-inspired salad made with smoky roasted eggplant, bell peppers, and greek yogurt, flavored with lemon juice, garlic, and extra-virgin olive oil

Recipe Ingredients for Turkish Eggplant Salad

2 lb eggplant, roasted
1 large red pepper, roasted
1 large green pepper, roasted
1/4 cup olive oil, extra-virgin
227 g (1 cup) nonfat greek yogurt
1/4 cup lemon juice
2 tbsp garlic, minced

Recipe Directions for Turkish Eggplant Salad

  1. Cut the eggplant in half, brush with a little oil, and place in an oiled, foil-lined pan

  2. Cut the peppers in half, remove stem and seeds, brush with a little oil, and place alongside the eggplant

  3. Broil eggplant and peppers under a preheated broiler until the peppers' skins are charred and the eggplant is soft (peppers will be done first--set them aside to cool)

  4. When cool enough to handle, scoop out the flesh from the eggplant and remove the skins from the peppers

  5. Mash the eggplant and stir in the yogurt and lemon juice

  6. In a food processor, blend one half of each the peppers with the garlic and olive oil until smooth

  7. Roughly chop or finely slice (I like to julienne and then cut the strips in half) the reserved one-half of each of the peppers

  8. Stir pepper mixture and chopped or sliced peppers into eggplant mixture

  9. Serve at room temperature or chill

  10. This is excellent with pita bread and/or sliced cucumbers
