A lighter lasagna, with all the taste of a full fat version.

Recipe Ingredients for Turkey & Zucchini Lasagna

166 g ground turkey
175 g zucchini, shredded
80 g button mushrooms
100 g red onion, chopped
2 garlic cloves
400 g chopped tomatoes
120 ml tomato paste
1 tsp dried parsley
1 dash salt
1 tsp dried oregano
1/2 tsp black pepper
110 g lasagna noodles
140 g part-skim ricotta cheese or other low fat soft cheese
85 g part-skim mozzarella
35 g Parmesan cheese
150 ml water

Recipe Directions for Turkey & Zucchini Lasagna

  1. In a skillet, cook the ground turkey, zucchini, onion and garlic over medium heat until the meat is no longer pink; drain. Puree tomatoes to a smooth consistency and stir into meat mixture. Add the water, tomato paste, parsley and seasonings. Bring to a boil, reduce heat and simmer, uncovered, for 15 minutes, stirring occasionally.

  2. Spread 1/4 of the meat sauce in a greased 9x9x2in baking dish. Arrange 2 (1/3) the uncooked noodles over the sauce, spread with another 1/4 of the meat sauce; top with half of the ricotta; sprinkle with 1/3 each of the mozzarella and Parmesan. Repeat. Cover with the last 2 (1/3) of the uncooked noodles, cover with the remaining meat sauce, sprinkle with remaining mozzarella and Parmesan. Cover and bake at 180C for 1 hour. Uncover; bake 15 minutes longer, or until the top is bubbly and beginning to brown. Let stand for 15 minutes before cutting.
