A delicious & low calorie main dish - makes 2 pies

Recipe Ingredients for Turkey Veggie Quiche

1 lb. ground turkey
1/2 cup chopped yellow squash
1/2 cup chopped yellow onion
1/2 cup chopped red pepper
1 cup frozen or fresh broccoli florets
3 tbsp. olive oil
3 eggs
1/2 cup 2% milk
1/4 cup light cream
1/4 cup water
1 tbsp. butter
1/2 cup mozzarella cheese, skim milk
1/4 cup cheddar cheese
2 pillsbury pie crusts
2 tbsp. garlic powder
3 garlic cloves
2 tsp. cayenne powder

Recipe Directions for Turkey Veggie Quiche

Heat oven to 400. Put pie crusts in 9" pans and heat in oven for about 7 minutes. Take out and cool. Saute' onions, garlic, squash, onion & peppers in large pan with olive oil, salt & pepper. In mixing bowl, blend eggs, milk, cream, water and garlic powder. Pour mozzarella cheese in bottoms of pie crusts. Evenly spread veggie mix in pans, then spread turkey burger on top of veggies. Sprinkle some of cheddar cheese on top. Spread broccoli on top of turkey, then slowly pour egg mixture over and sprinkle remaining cheese on top. Bake for about 35 minutes or until set. (you may want to cover crust edges with foil or piecrust shield to prevent over browning) Enjoy!!
