Recipe Ingredients for Turkey-Veggie Lasagna Rollups

1 lb ground turkey
1 onion, diced
1 bell pepper, diced
1 zucchini, diced
1 lb lasagna noodles
1 cp reduced fat ricotta cheese
1 cp reduced fat mozzarella cheese
1/2 tsp salt
1/4 tsp pepper
1/4 tsp basil
1/4 tsp oregano
1/8 tsp garlic powder

Recipe Directions for Turkey-Veggie Lasagna Rollups

  1. Boil lasagna noodles until "al dente" and drain. Rinse well so they don't stick together while cooling.

  2. Spray medium size fry pan with non-stick cooking spray, and saute all veggies until translucent.

  3. Add turkey, and cook thoroughly, then drain any pan juices. Add 1/2 of the tomato sauce to the meat mixture.

  4. Mix ricotta and all spices together.

  5. Take one noodle, add a spoonful of the cheese mixture and spread out evenly across the noodle.

  6. Follow with a spoonful of the meat mixture.

  7. Carefully roll up and place in a 13 x 9 baking dish, that has been sprayed with non-stick spray.

  8. Repeat until all noodles, cheese and meat is used up.

  9. Top all rolls with remaining tomato sauce and mozzarella cheese.

  10. Bake at 350 degrees F for about an hour to fully heat through.
