A delicious and healthy alternative to the ground beef variety. It takes about an hour all together to dice and combine everything but the final outcome is superb! It's great by itself or served over a bed of whole grain rice. Enjoy!

Recipe Ingredients for Turkey & Veggie Chili

3 tbsp extra virgin olive oil
21 oz lean ground turkey
2 large red onions, diced
2 red peppers, diced
2 large green peppers, diced
28 oz crushed tomatoes
28 oz diced tomatoes, drained
4 tbsp chili powder
3 tbsp tomato paste
1/4 cup lemon juice
4 tbsp minced garlic
12 oz sliced jalapenos, diced
31 oz corn
31 oz black beans

Recipe Directions for Turkey & Veggie Chili

  1. Combine all of the ingredients into a 5qt pan in the order they are listed. Cook on medium until everything has been added and then let simmer on low for 60 minutes.

  2. My personal preference is only to sauté 1/4 of the chopped red onion, green pepper, and red pepper with the turkey. I add the other 3/4 of the onion/pepper mix after adding the canned tomato products because it gives them a crispier bite in the end.
