Healthy chili with turkey, eggplant and mushrooms.

Recipe Ingredients for Turkey Veggie Chili

1 tsp olive oil
3 cloves garlic, minced
2 1/2 tbs chili powder
1 1/2 tsp oregano
1/2 tsp cumin
1/4 tsp red pepper flakes
1 tsp salt
1 1/2 lb. ground lean turkey
28 oz stewed tomatoes
1 1/2 tbs tomato paste
2 cups eggplant
1 cup mushrooms
1/2 cup celery
1 cup onion
1 cup green pepper
14 oz. cannelini beans

Recipe Directions for Turkey Veggie Chili

Chop veggies and brown in olive oil. Add turkey and saute. After veggies are wilted and turkey cooked through, add tomatoes and paste. Add 1.5 tsp oregano, 2.5 Tsp chili powder, 1 tsp salt. Simmer 1/2 hour then add beans. Continue simmering on low heat for about 1 hour.
