This is the recipe Jessie gave me. I tweaked it a little I used pinto beans instead of kidney beans and it called for a bag of frozen peas which I forgot to add. Also she called for 2 yukon gold potatoes, we could not find them so I just used 2 big baking potatoes. But this was AWESOME and it made up to be about 24 cups of chili! Make sure you use a really big pot! Also I minced most my veggies. Next time I will make my taters smaller too.

Recipe Ingredients for Turkey Veggie Chili (by Jessie)

2 pounds ground turkey
2 large onions
4 cloves garlic
2 large red bell peppers
56 oz canned diced tomatoes
1/2 cup sliced jalapenos
64 oz canned pinto beans
16 oz can black beans
2 stalks celery
4 large carrots
2 russet potatoes, skin off
2 1/2 oz chili seasoning

Recipe Directions for Turkey Veggie Chili (by Jessie)

  1. microwave potaotes for 5 minutes to get them soft, then dice

  2. brown the turkey, drain and set aside

  3. dice all veggies

  4. sautee garlic and onions until soft

  5. add peppers, cellery, carrots, potatoes, jalapenos

  6. add meat and the rest of ingredients

  7. simmer over low heat for about and hour

  8. You can add salt and pepper to taste....or a little extra chilli powder if you want to. I like mine really intensly flavored with chilli powder.

  9. (you can add any other veggies that you like...or any beans that you like. I also add zucchinni sometimes, and mushrooms, sometimes ocre, sometimes green beans. The veggies will bulk it up)
