Recipe Ingredients for Turkey and Veggie Bake

500 grams Fresh Ground Turkey - Lean
1 medium unpeeled raw Eggplant
1 cup Fat Free Cottage Cheese
1.5 cup Tomato
1 medium (2" dia, 5" long, raw) Sweetpotato
1 cup Spinach
0.5 cup Fat Free Ricotta Cheese
6 clove Garlic
1 medium (2-1/2" dia) Onions

Recipe Directions for Turkey and Veggie Bake

Cook garlic onions and turkey mince together. Add tomato sauce. Slice veggies into thin pieces and layer on a baking sheet and cook till almost done. In a bowl, mix spinch and ricotta. Layer veggies, cheese, and turkey in a baking dish. Bake until veggies are cooked and cheese is melted.
