This recipe is so delicious! With all the veggies, it makes a nutritious low fat meal with just a side salad. (OK and maybe some low fat mashed potatoes.) There's some chopping involved, but it goes very quickly with a food processor.

Recipe Ingredients for Turkey Veggie Applesauce Meatloaf

1 1/2 lbs ground turkey breast
1/2 cup red bell pepper
1/2 cup chopped celery
1 med onion, chopped
3 cloves garlic, chopped fine
1 carrot, chopped fine
1 small zucchini, chopped
1/4 tsp salt
1/4 tsp pepper
1/2 cup unsweetened applesauce
1 egg
1/2 tsp dried basil
1/2 tsp mustard, preferably stone ground
1 cup organic ketchup, divided

Recipe Directions for Turkey Veggie Applesauce Meatloaf

  1. In a food processor chop separately, bell pepper, onion, carrot, celery, zucchini, garlic.

  2. Add to big mixing bowl and mix gently with a fork:

  3. turkey, chopped veggies, applesauce, egg, basil, salt, pepper, 1/4 cup of the ketchup and the mustard.

  4. Form into a loaf in a pan you have sprayed with non stick cooking spray.

  5. top meatloaf with remaining ketchup and bake at 350 for 45 minutes or until cooked thru.
