A light, turkey vegetable soup to use as an appetizer.

Recipe Ingredients for Turkey Vegetable Soup

2 cups low sodium chicken broth
6 cups water
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup onion, chopped
1/3 cup celery, chopped
196 grams Kettle Creations Pasta and Bean mix (1 cup)
1/2 pound turkey breast meat, chopped

Recipe Directions for Turkey Vegetable Soup

  1. Put broth, water, seasonings, onion and celery in pot with pasta and bean mix and turkey meat. Simmer 1 hour until beans are tender. Add a sprinkle of celery salt if desired to perk up the flavor. Serves 8.

  2. The analyzer rates this with a grade of C+ because of the sodium in the bean and pasta mix. The bean and pasta mix I use only has 56 milligrams of sodium not the 3383 milligrams shown in the analyzer's bean and pasta mix. This soup, the way I make it, is not high in sodium.
