Great dish for leftover turkey breast

Recipe Ingredients for Turkey Vegetable Soup

1 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 cup carrot, diced
1 cup celery, diced
6 cups low sodium chicken stock
8 oz cooked turkey breast
1/4 cup pearl barley
1/4 cup wild rice
4 oz mushrooms, sliced
1/2 cup green beans, cut into one-inch pieces
3 tbsp parsley
1 pinch of turmeric
1 salt and pepper to taste

Recipe Directions for Turkey Vegetable Soup

  1. Saute onion through celery about 10 minutes

  2. Add stock through rice and bring to low boil

  3. Simmer about 40-45 minutes until barley and rice are cooked, but still chewy

  4. Add mushrooms, beans, and one tbsp of the parsley

  5. Simmer 5 more minutes and remove from heat

  6. Finish with salt, pepper, turmeric, and parsley
