A very tasty, low calorie soup with turkey, clams and a variety of vegetables. Serving size is about 1 1/2 cups.

Recipe Ingredients for Turkey Vegetable Chowder

14 ounces Turkey Breast, chopped
1 tablespoon Olive Oil
6 1/2 ounces Clams, canned, chopped
6 ounces Red Onion, chopped
2 cloves Garlic, minced
8 ounces Celery, chopped
6 ounces Carrots, chopped
9 ounces Green Bell Pepper, chopped
1 1/2 ounces Cilantro, chopped
15 ounces Chickpeas, canned, pureed
14 1/2 ounces Tomatoes, canned, diced
6 1/2 ounces Mushrooms, canned, sliced
7 3/4 ounces El Pato Tomato Sauce, canned
3 ounces Spinach leaves, raw
1/2 teaspoon Basil leaves, dried
1/2 teaspoon Black Pepper
1/2 teaspoon Cumin Seed, ground
1/2 teaspoon Sage leaves, dried
1/2 teaspoon Paprika
1/2 teaspoon Garlic Powder
1/2 teaspoon Coriander Powder
1/2 teaspoon Thyme Leaves, dried
1/2 teaspoon Onion Powder
1/2 teaspoon Sea Salt
2 cups Water

Recipe Directions for Turkey Vegetable Chowder

  1. Heat oil in Dutch Oven over medium-high heat

  2. Add onions and saute 2 minutes

  3. Add turkey, garlic and celery and saute 5 minutes

  4. Puree Chickpeas (Garbanzo beans) with juice from can and add to pot

  5. Add entire can of tomatoes and juice to pot

  6. Add clams and juice to pot

  7. Drain mushrooms and add to pot

  8. Add all remaining ingredients, stir and bring to a boil

  9. Reduce heat and simmer 30 minutes
