Hearty soup that can be either a meal or an appetizer. High Protein at 13g with Good Cholesterol and good Carbs. Saves great for leftovers.

Recipe Ingredients for Turkey-Vegetable-Barley Soup

4 oz Fresh Ground Turkey - Lean
1 cup, chopped Onions
1 cup, chopped Carrots
1 cup, diced Celery
0.5 cup, chopped Peppers, Sweet, Red
1 cup, pieces or slices Mushrooms
1 medium Squash, Summer, Zucchini, Includes Skin
1/2 cup Mild Diced Tomatoes and Green Chilies
1 clove(3 g) Garlic
0.75 cup Barley
5 cup (8 fl oz) Water

Recipe Directions for Turkey-Vegetable-Barley Soup

  1. Brown meat

  2. Add all other ingredients

  3. Bring to rapid boil

  4. Reduce temperature to medium

  5. Allow to simmer 15-20 minutes
