Recipe Ingredients for Turkey Tetrazzini

1 slice whole wheat bread,processed into crumbs
1 1/2 tbsp. butter, melted
1/3 cup Parmesan cheese, grated
6 tbsp. butter
8 oz. fresh mushrooms, sliced thinly
2 medium onions, chopped
1/2 cup red pepper, chopped
1/2 cup celery, chopped
3/4 lb. whole wheat spaghetti
1/4 cup flour
2 cups low-sodium chicken broth
1 1/2 oz. dry sherry
3/4 cup Parmesan cheese
1/4 tsp. fresh lemon juice
2 tsp. fresh thyme leaves, minced
2 cups frozen peas
4 cups cooked turkey, cut into 1/2-inch pieces

Recipe Directions for Turkey Tetrazzini

  1. Make topping: Adjust oven rack to middle position and heat the oven to 350. Mix bread crumbs, salt (to taste) and butter in a small baking dish or pan; bake until golden brown and crisp, 15 to 20 minutes. Cool to room temp and mix with Parmesan in a small bowl and set aside.

  2. Make filling: Increase oven temp to 450. Heat 2 tablespoons butter in large skillet over medium heat until the foaming subsides and add mushrooms, celery, red pepper and onions and saute, stirring frequently, until the onions soften and the liquid from the mushrooms evaporates, about 10 to 15 minutes. Place in bowl and set aside.

  3. Pasta: Bring 4 quarts of salted water to a boil and cook whole wheat pasta to al dente. Reserve 1/4 cup cooking liquid, drain pasta and return to pot with the 1/4 cup saved water.

  4. Make sauce: Melt 4 tablespoons butter in a clean skillet over medium heat. When the foam subsides, whisk in the flour and cook, whisking constantly until flour turns golden -- 1 to 2 minutes. Whisking constantly, gradually add the chicken stock. Turn heat to med-high and simmer until the mixture thickens -- 3 to 4 minutes. Off heat, whisk in the sherry, Parmesan, nutmeg, lemon juice, thyme and 1/2 teaspoon salt. Add sauce, sauteed veggies, peas and turkey to the spaghetti and mix well. Adjust seasonings to taste.

  5. Finish: Turn mixture into a buttered 9 x 13-inch baking dish (or similar vessel), sprayed with cooking spray. Sprinkle with reserved crumbs and bake until the crumbs brown and mixure is bubbly, 13 to 15 minutes.
