Recipe Ingredients for Turkey Tamale Pot Pie

1 onion
3/4 c red bell pepper
4 garlic cloves
1 lb ground turkey breast
1 tbl chili powder
1 tsp dried oregano
1/2 tsp salt
14 1/2 oz canned diced tomatoes
15 oz canned kidney beans
1 c all-purpose flour
3/4 c yellow cornmeal
1 tsp sugar
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1 c low-fat buttermilk
1 large egg

Recipe Directions for Turkey Tamale Pot Pie

  1. preheat oven to 425

  2. Heat large non-stick skillet over medium-high heat

  3. add first four ingredients cook 5min.

  4. add next 5 ingredients cook 3min

  5. spoon turkey mixture into 11x7 baking dish coated with cooking spray

  6. to prepare topping:

  7. combine dry ingredients in bowl

  8. combine wet ingredients in separate bowl

  9. add wet to dry stirring just until moistened

  10. spread cornmeal mixture evenly over turkey mixture

  11. bake at 425 for 18min or until topping is golden
