Healthier version of traditional taco salad

Recipe Ingredients for Turkey Taco Salad

1 Cooking spray
1 whole grain 8" tortilla
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
1 teaspoon olive oil
1 lb 93% ground turkey
6 cups chopped romaine lettuce
6 cups baby spinach
3 cups chopped tomatoes
6 tablespoons guacamole (preferably homemade)
6 tablespoons Salsa
3 tablespoons reduced fat sour cream (or substitute plain greek yogurt)
3 tablespoons shredded 2% cheddar cheese

Recipe Directions for Turkey Taco Salad

  1. Preheat oven to 300 degrees. Cut tortilla into small strips, and place on cookie sheet that's been sprayed with cooking spray. Bake until crisp, then cool.

  2. Mix spices. Coat skillet in cooking spray, add olive oil, and heat. Cook turkey and spices together.

  3. Prepare condiments.

  4. Distribute evenly romaine and baby spinach on 6 plates. Cover with turkey spice mixture, tomatoes, guacamole, salsa, sour cream, and cheese. Top with based tortilla strips.
