Recipe Ingredients for Turkey Taco Rice

1 cup uncooked brown rice
3/4 pound ground turkey
1 medium onion
1/2 large green pepper
4 tsp Low-sodium taco seasoning
1/2 tablespoon butter
1 oz Pepperjack Cheese
1 tbsp Canola Oil

Recipe Directions for Turkey Taco Rice

  1. Begin cooking the rice as directed by the package.

  2. Add the Canola oil to a large hot pan followed by the onion and pepper (cut up) and fry until soft

  3. Add crumbled ground turkey and mix thoroughly. Cook until it no longer looks pink.

  4. Drain most of the grease from the pan. Return to heat and add the taco seasoning, followed by 1/4 - 1/2 cup of water. And cook for 2-4 minutes, until most of the water is cooked off.

  5. Add the shredded Pepperjack and cook until melted. Then add the entire pan to the pot with the completed rice and mix in well.

  6. It can be served as a main course, side dish, or in a burrito/taco shell.
