This is how I make turkey taco mix. I use the tomatoes as a filler to cut down on the amount of meat in the recipe, and thus cuts down on calories vs. other turkey taco recipes out there. You can improve upon the recipe in many ways by adding salsa, fat-free refried beans, brown rice. I personally like making tacos with a bit of Greek yogurt, lettuce, and low fat colby jack cheese. Problem with the recipe analyzer - It does not account for water evaporation and draining of the canned tomatoes. It also is not calculating for 99% fat free turkey breast. Actual serving size is about 40 grams and 40 calories..

Recipe Ingredients for Turkey Taco Mix


Ingredients:
56 oz diced tomatoes (from can)
1 1/4 lbs. ground turkey breast
3/4 cup water
2 tablespoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon ground cayenne pepper
1/2 teaspoon dry oregano
1 teaspoon paprika
3 teaspoons ground cumin
1 teaspoon salt
1 teaspoon black pepper

Recipe Directions for Turkey Taco Mix

  1. You will need:

  2. a 10" diameter non-stick frying pan

  3. non-stick cooking spray

  4. colander or strainer

  5. wooden spoon or non-stick safe spatula

  6. First get taco seasoning ready by mixing all of the dry spices together. (salt, black pepper, chilipowder, garlic, onion, cayenne, cumin, paprika, and oregano) Set aside for now.

  7. Then, open cans of diced tomatoes and empty into colander/strainer and run under cold water in sink to remove all of the juice they are packed in. Drain as much as possible and place in a bowl.

  8. Next, spray a generous coat of cooking spray on the frying pan to keep the turkey from sticking so badly. Add turkey to pan and heat on a medium high heat constantly stirring and dividing up the pieces into smaller pieces until all of it has turned white and cooked through. Add turkey to colander/strainer and run under HOT water to wash off the excess oils and fats.

  9. Now add the turkey back to the pan. Add the tomatoes, the 3/4 cup of water and the dry seasonings. Mix well. Simmer on a lower heat setting about 5 to 10 minutes until the water has mostly evaporated, being sure to stir occasionally.

  10. Yield: about 25 tacos or 8 taco salads worth
