Healthier version of stuffed peppers

Recipe Ingredients for Turkey stuffed peppers

15 sprigs Parsley
22 oz Fresh Ground Turkey - Lean
1 large Egg, Whole
1.5 cup Rice, Brown, Long-grain, Cooked
1 large Onions
4 clove Garlic
6 cup, strips Peppers, Sweet, Red
32 oz Tomato Sauce
16 oz Tomatoes, Red, Ripe

Recipe Directions for Turkey stuffed peppers

  1. Preheat oven to 350

  2. Mix 1 to 1 1/2 pounds of lean ground turkey or chicken with 1 large beaten egg, 1 diced medium to large onion, 4 cloves of minced garlic, 1 1/2 cups cooked brown rice, 10-15 springs fresh parsley chopped (or couple pinches of dried parsley), a dash of worchester sauce and a pinch of salt and pepper.

  3. Cut the top of 6 peppers and remove insides, stuff peppers with meat mix.

  4. Put in baking dish and cover with tomato sauce. I use 32 ounce can of tomato sauce mixed with 16 ounces of diced tomatoes. Cover with foil and bake for 1 hour. Remove foil and bake additional 30 minutes.
