Gorgeous red bell peppers stuffed with turkey, carrots and rice; broiled to perfection.

Recipe Ingredients for Turkey Stuffed Peppers

1/3 cup White Rice
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
125 grams Fresh Ground Turkey - Lean
1/2 cup Carrots Shredded

Recipe Directions for Turkey Stuffed Peppers

  1. Preheat oven to 375F

  2. Combine turkey meat, shredded carrots and pre-cooked rice (we usually use leftover). Season to taste.

  3. Cut the top off the red pepper and clean out the inside.

  4. Stuff the pepper with meat mixture.

  5. Place the stuffed pepper in a dish filled with about 1/2 inch thick deep water.

  6. Bake for 20-30 minutes, or until meat is completely cooked.

  7. Let cool for 10 minutes or so, and serve with potatoes and nice greens.
