Turkey Stuffed Pepper Soup w/ Brown Rice Side

Recipe Ingredients for Turkey Stuffed Pepper Soup

1 tbsp Light Stick
600 cal Everyday Turkey
1 medium Green Bell Pepper
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 large Onions
1 serving Swanson Veggie flavor boost
176 cal Diced Tomatoes, No Salt Added
30 cal Garlic
6 serving Food Lion garlic and herb pasta sauce
2 tbsp Salt, Table
1 tbsp Pepper, Black
1 cup (8 fl oz) Water
2 tsp, leaves Thyme, Dried

Recipe Directions for Turkey Stuffed Pepper Soup

  1. Ingredients:

  2. 3 cups cooked brown rice (on the side)

  3. 1 lb 93% lean ground turkey

  4. 1/2 cup chopped green bell pepper

  5. 1/2 cup chopped red bell pepper

  6. 1 cup finely diced onion

  7. 3 cloves garlic, chopped

  8. 2 cans (14.5 oz each) cans petite diced tomatoes

  9. 1 3/4 cups tomato sauce

  10. 2 cups reduced sodium, fat-free veggie broth

  11. 1/2 tsp dried thyme

  12. salt and fresh pepper to taste

  13. Directions:

  14. In a large pot or dutch oven, brown ground turkey on high heat and season with salt. Drain fat if any, reduce heat to medium-low, then add peppers, onions and garlic. Cook about 5 minutes on low heat.

  15. Add tomatoes, tomato sauce, veggie broth, thyme and season with salt and pepper to taste. Cover and simmer on low heat for 30 minutes. Serve about 1 1/3 cups of soup in each bowl and top with 1/2 cup cooked brown rice.
