Lasagne made with ground turkey and spinach

Recipe Ingredients for Turkey and Spinach Lasagne

8 cup Tomatoes, Red, Ripe
8 oz Mushrooms, Brown, Italian, Or Crimini
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 medium raw Onion Red
6 medium raw Tomato Roma
1/4 cup leaves, whole Basil, Fresh
1 tablespoon Oregano
1/2 teaspoon Thyme
1/4 tsp Pepper, Black
1/2 tsp Sea Salt
16 oz Ground Turkey
13 3/4 oz Lasagne Noodles
2 cups Part Skim Ricotta
6 cups Spinach
2 cups Sargento Mozzarella and Provolone
1/2 cup Parmesan
1/4 cup chopped fresh parsley

Recipe Directions for Turkey and Spinach Lasagne

  1. Preheat oven too 400, I use convection roast setting on my oven. Put one tablespoon of olive oil in a sheet pan cut the Garlic head in half and place on sheet pan. Cut the roma tomatoes in half and seed, place these on the pan. Cut the zucchini into large slices and place on pan. Sprinkle the vegetables with another tablespoon of olive oil. salt and pepper veggies and roast for 30 minutes. remove from oven and cool. Remove garlic from skin and chop finely. Remove skins from tomatoes and chop. Chop zucchini to desired size. If you have children like mine this means small so they dont know it's there!

  2. Meanwhile, dice the red onion. In a large sauce pan add the remaining olive oil(1/4 cup) and heat over medium heat. Add onion and sweat for 2-3 minutes. Add roasted garlic to pan. cook until onions are soft. Slice and add the crimini mushrooms. Saute until soft. blend the canned tomatoes to desired consistency. I use home canned two quarts. I blend them bacause of my kids, not a fan of chunky tomatoes! Add tomatoes to sauce. Add the roasted tomatoes and zucchini to pan. add the rest of the seasonings. Cover the pan and bring to a boil. Reduce heat and simmer for1 - 2 hours. Remove lid and reduce to desired thickness.

  3. Brown ground turkey in a saute pan, drain and let cool.

  4. Saute spinach in a little olive oil until wilted.

  5. Cook lasagne noodles and drain, let cool..

  6. Mix the ricotta, chopped parsley, and cooked spinach mix well.

  7. Assemble the lasagne. Put a small amount of sauce in the bottom of a 9X13 baking pan. Add a layer of noodles. Next add the ricotta mixture and spread evenly, out a small amount of sauce on top the riccota mixture. Add another layer of noodles, sauce, meat, and a small amount of mozzarella and parmesan. Repeat until all the noodles are used. Finish the top with sauce and the rest of the mozzarella and parmesan.

  8. Bake in a 350 oven for 45 minutes or until mozzarella is browned and the sauce is bubbly.

  9. Serve with salad and italian bread!
