Turkey and Spinach Lasagna Recipe

i edited this recipe to have fat free cheese and skim milk and ground turkey rather then chicken and turkey bacon rather then pork bacon. original recipe had 45 grams of fat 35 carbs and 230 mg of cholesterol and 750 calories

Recipe Ingredients for turkey and spinach lasagna

1 lb spinach
1 1/5 lb ground turkey
1 garlic clove
3 slices turkey bacon
14 oz crushed tomatoes
1/2 cup tomato paste
1/2 cup tomato sauce
1/2 cup chicken stock
2 oz dry whole wheat lasagna noodles
7 oz fat free shredded cheddar cheese
2 oz butter
1/3 cup flour
2 1/2 cups skim milk

Recipe Directions for turkey and spinach lasagna

  1. preheat oven to 350 degrees

  2. blanch spinach leaves for 2 minutes or until tender, place into a bowl of ice water and drain

  3. heat nonstick pan with cooking spray add the bacon, ground turkey and mince the garlic cook for 5 minutes until browned. stir in the tomato, tomato paste,sauce and stock bring to a boil. reduce the heat and simmer partiall covered for 10 minutes or until the sauce is slightly thickened. season with salt and pepper to taste.

  4. to make cheese sauce melt the butter ina medium sauce pan, add the flour and stir over low heat for 1 minute or until mixture is lightly golden and smooth. remove from heat and gradually stir in the milk. return to heat and stir constantly over medium heat for 4 minutes, or until the sauce boils and thickens. remove from the heat and stir in 1/2 the cheese.

  5. to assemble: spray casserole dish with fat free cooking spray, spread 1/4 of the turkey mixture over the base top with 4 sheets of lasagna spread with 1/3 the cheese sauce then another layer of turkey filling. top with all the spinach a layer of lasagna noodles, a layer of cheese sauce and remaining turkey mixture spread evenly with the remaining cheese sauce and sprinkle with the remaining cheese, bake for 50 minutes or until cooked through and golden brown.
