Recipe Ingredients for Turkey Soup with Yams & Potatoes

3/4 pound raw potatoes
1/2 pound raw yam
1 teaspoon olive oil
1/2 medium onion, chopped
1 medium carrot, sliced
2 stalk celery, sliced
2 medium tomatoes, diced
1 teaspoon Italian seasoning
3 cups low sodium chicken broth
1 cup sliced cabbage
1/2 teaspoon garlic salt
175 g cooked turkey breast

Recipe Directions for Turkey Soup with Yams & Potatoes

  1. Precook potatoes in boiling water.

  2. Heat oil in a large stock pot over medium-high heat. Saute onion, carrot, and celery until onion is translucent and vegetables are tender, 5 to 7 minutes. Stir in tomatoes and Italian seasoning, and cook 5 minutes more, stirring frequently.

  3. Add chicken broth to vegetables. Adjust heat to a medium simmer, and cook approximately 10 minutes. Add cabbage, sprinkle with garlic salt, and cook until tender, 5 minutes more. Add cooked potatoes and turkey. Adjust seasoning with salt and pepper, and serve.
