Butcher a Turkey into part and use the carcass to make a tasty soup

Recipe Ingredients for Turkey Soup

12 cups low sodium chicken or turkey broth
2 carrots, chopped
2 stalks celery, sliced
1 large onion
3 potatoes, cubed
1/2 cup cabbage, chopped
1/2 cup spinach
2 cups turkey, cubed

Recipe Directions for Turkey Soup

  1. Remove legs with thighs from 8-10 pound turkey. Take breast and skin and save for stuffed turkey breast recipe.

  2. Place carcass in 12 cups cold water. Bring to boil and skim foam from broth. Remove carcass and strip of usable meat.

  3. Add carrots and simmer for 10 minutes. Add celery, onion, cabbage, and potatoes. Simmer 10 more minutes. Add turkey meat and spinach and heat through. Serve over egg noodles
