Recipe Ingredients for Turkey soup

1 lb lean ground turkey
32 oz stewed tomatoes
1 medium onion
1 cup eggplant
1 cup zucchini
4 cups chicken stock

Recipe Directions for Turkey soup

Cook and drain turkey. Add to a large soup pot, put in chicken stock and stewed tomatos, add the rest of the veggies and cook over low-medium heat until veggies are tender. Serve with corn muffins or whole wheat rolls.
