Recipe Ingredients for Turkey Soup with Macaroni

1 teaspoon olive oil
1/2 medium onion, chopped
1 medium carrot, sliced
2 stalk celery, sliced
2 medium tomatoes, diced
1 teaspoon Italian seasoning
3 cups low sodium chicken broth
1 cup sliced cabbage
1/2 teaspoon garlic salt
1/2 cup uncooked macaroni
175 g cooked turkey breast

Recipe Directions for Turkey Soup with Macaroni

  1. Heat oil in a large stock pot over medium-high heat. Saute onion, carrot, and celery until onion is translucent and vegetables are tender, 5 to 7 minutes. Stir in tomatoes and Italian seasoning, and cook 5 minutes more, stirring frequently.

  2. Cook macaroni in separate pot according to box directions.

  3. Add turkey broth to vegetables. Adjust heat to a medium simmer, and cook approximately 10 minutes. Add cabbage, sprinkle with garlic salt, and cook until tender, 5 minutes more. Add cooked macaroni and turkey. Adjust seasoning with salt and pepper, and serve.
