A rich flavorful lasagne without ricotta. Brown rice lasagna noodles were actually used here.

Recipe Ingredients for Turkey Shiitake Lasagne

1 T olive oil
1/2 onion, sliced
7 cloves garlic, sliced
5 3/10 oz shiitake mushrooms, sliced
1 3/4 oz spinach, chopped
1 pound ground turkey
1 t oregano, dried
1/2 t black pepper
28 oz pasta sauce, low sodium, no sugar added
13 9/10 oz mozzarella, shredded
10 oz whole wheat lasagna noodles

Recipe Directions for Turkey Shiitake Lasagne

  1. Saute onions, garlic, mushrooms, and ground turkey in olive oil. Add spinach and herbs. Simmer until flavors meld (30 minutes).

  2. Prepare noodles to package directions. Undercook slightly since the lasagna will again be baked in the oven.

  3. Using a large oven proof casserole dish ladle a small amount of sauce on the bottom then spread out a layer of noodles. Spread out more sauce and then a handful or two of the cheese. Continue layering until no ingredients remain ending with a layer of mozzarella. Bake at 350 until the top is melted, bubbly and golden. Let rest for 10 minutes before cutting.
