Shepherd's Pie with ground turkey

Recipe Ingredients for Turkey Shepherd's Pie

1/4 cup olive oil
2 cups onion, chopped
4 garlic cloves, minced
20 ounces ground turkey
1/4 cup flour
1 cup water
1/4 cup red wine
4 tsp rosemary, fresh
1/4 cup italian parsley, fresh, chopped
4 potatoes
1 tbsp butter
1/8 cup non-fat milk
1 pepper to taste

Recipe Directions for Turkey Shepherd's Pie

  1. Peel potatoes and cut in half. Boil about 20 minutes. Remove from heat, drain, set aside.

  2. In 10 inch skillet or dutch oven, heat oil; add onion and garlic. Coook over high heat, stirring often, til onion is translucent, about 1 minute.

  3. Add turkey, reduce heat to medium high. Cook stirring to break up large pieces, until turkey is no longer pink, about 6 minutes.

  4. Sprinkle four over turkey mixture and stir quickly to combine; cook, stirring constantly, for 1 minute.

  5. Add 1 cup water, wine, and rosemary and cook over high heat til mixture comes to a boil.

  6. Stir in parsley; reduce heat to medium-low and let simmer 3 minutes.

  7. While turkey mixture simmers, mash potatoes. Add butter, and use enough milk to get creamy texture.

  8. Pour turkey mixture into 2 qt casserole (or divide equally into smaller/individual size containers). Top with mashed potatoes.

  9. Cook in preheated oven at 375 degrees for 30 minutes, or until the meat is bubbling hot and potatoes are browned.

  10. Optional: sprinkle shredded sharp cheddar on top, but cheese is not included in nutritional analysis.
