A breakfast casserole full of veggies, turkey sausage and egg substitute

Recipe Ingredients for Turkey Sausage and Veggie Egg Casserole

4 serving Jimmy Dean Hearty Sausage Crumbles Turkey
4 cup Egg Beaters
5 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin
8 cup Spinach
1 medium raw Onion Yellow
1 medium Squash, Summer, Zucchini, Includes Skin
8 oz Mushrooms
2 medium (4-1/8" long) Onions, Spring Or Scallions
325 grams Pepper Strips

Recipe Directions for Turkey Sausage and Veggie Egg Casserole

  1. Boil red potatoes until soft.

  2. Meanwhile, dice onions, rinse packaged mushrooms, open pepper strips, dice green onions and squash.

  3. Combine all veggies except potatoes, and turkey sausage and pan fry with olive oil pam until veggies are soft. Add salt, pepper, and oregano to taste.

  4. In a large lasagna pan (bigger than 9 x 13) spray with olive oil pam, then place cooked potatoes on the bottom and break apart into chunks.

  5. With a slotted spoon, remove cooked veggies from pan and spread around pan.

  6. Empty an entire large container (about 4 full cups) of egg substitute into veggie mixture and mix well, then sprinkle with Molly McButter.

  7. Place in oven at 375 degrees for about 25 minutes, or until eggs are cooked through in the middle section of the pan.

  8. Remove and let stand for about 4-5 minutes, then cut and serve.

  9. This can be garnished with Fat free sour cream, shredded cheese, salsa, etc and served as a breakfast item or dinner item. Yum!!!
