Turkey Sausage Calzone Recipe

Recipe Ingredients for turkey sausage calzone

1 pkg yeast
1 T sugar
1 1/4 c warm water
1/2 c whole wheat flour
2 1/2 c bread flour
2 T olive oil
1 onion, medium, chopped
8 oz mushrooms, chopped
2 cloves garlic
10 oz frozen chopped spinach
5 links (1 pkg) lean italian turkey sausage
6 oz mozzarella cheese, part skim
4 oz feta cheese

Recipe Directions for turkey sausage calzone

  1. Dissolve yeast and sugar in the warm water (110 F), let stand for 10 minutes. Mix with 2 cups of the flour, the salt, and 1 T of olive oil.

  2. Slowly add in remaining flour, turning out to knead when the dough is too stiff to stir. Place in clean, lightly oiled bowl and let rise until double, about 1 hr.

  3. In the meantime, make the filling

  4. Heat the remaining tablespoon of oil in a large frying pan, add the onions an saute until soft.

  5. Add the mushrooms, cook until soft, then the spinach (thawed and very well drained) and garlic.

  6. Remove cases from the sausages and add to the pan with the veggies. Cook until sausage is no longer pink.

  7. Set aside the filling to cool, draining off any extra liquid.

  8. Shred the mozzarella.

  9. Preheat the oven to 400 F.

  10. When dough is ready, divide in 2 and roll out each. Fill each with half the meat/veggies first, then sprinkle the cheese on top. Leave a blank space around each edge. Roll up the calzone, pressing edges together to seal.

  11. Bake on greased cookie sheets or parchment paper for about 22 minutes.
