Turkey Salad Recipe

Thanksgiving dinner left me with a ton of leftover turkey at the same time that my first sprouting endeavor left me with almost a gallon of alfalfa sprouts. This was my solution. You could further reduce the fat content by using all light meat and maybe even mixing in some nonfat Greek yogurt with the mayonnaise, but I like this consistency. Fee free to add mustard, salt, celery, pickles, whatever you like to get it to the texture and flavor that you want.

Recipe Ingredients for Turkey salad

6 cups alfalfa sprouts
3 cups turkey light meat, chopped
1 cup turkey dark meat, chopped
1 cup reduced fat mayonnaise
1/2 tsp poultry seasoning
1/2 tsp black pepper

Recipe Directions for Turkey salad

  1. Place all ingredients in a large bowl.

  2. Mix thoroughly with a spoon

  3. Enjoy on whole wheat bread or au naturale.
