Turkey meatballs with some hearty root vegetables and a bit of kick. A good fall stew, beautiful colors, keeps well in the fridge.

Recipe Ingredients for Turkey and Root Vegetables Stew

1 lb lean ground turkey
1 egg
1 tsp basil
1 tsp curry powder
1 tsp chili powder
1 tsp pepper
1 tsp chopped garlic
1 tbsp olive oil
1 vidalia onion, chopped
6 cups vegetable broth
1/2 cup whole wheat flour
1 1/2 lb fingerling potatoes, chopped
1 1/2 cup yam, chopped
1/2 lb baby carrots
1 lb frozen butternut squash
1 lb frozen lima beans
14 oz. no salt added canned diced tomatoes
1/4 cup jalapeno, minced
1 cup bell pepper, chopped
1/4 cup Frank's hot sauce
1 tsp cinnamon
1 tsp nutmeg
1 tsp thyme
1 tsp pepper

Recipe Directions for Turkey and Root Vegetables Stew

  1. Mix the first listed seasonings and the egg with the ground turkey, and form into small balls (about 1" each).

  2. Place the balls in the bottom of a large nonstick stew pot on medium-high heat, with the olive oil. Brown the meatballs on each side.

  3. Add the onion to the pot and stir.

  4. When the onions are just browned, pour in all but 1/2 a cup of the vegetable broth. Allow the broth to come to a boil.

  5. Mix the remaining broth with the whole wheat flour. Pour slowly into the stew pot and stir.

  6. Add the remaining vegetables to the pot, along with the additional seasonings.

  7. Cover and reduce heat to medium-low. Allow to simmer for at least one hour.
