A great use for leftover turkey. Caramelizing the onions takes time, but is worth the effort.

Recipe Ingredients for Turkey Rice Soup

1 large onion, caramelized
1 cup celery, diced
1 cup carrot, diced
3 T. Olive Oil
2 cups turkey broth
2 cups water
1 cup cooked turkey
1 pound mushrooms

Recipe Directions for Turkey Rice Soup

  1. Caramelize the onion in 2 T. olive oil. This takes 20 to 30 minutes, but is worth the effort.

  2. Add diced celery and carrots.

  3. Add turkey broth.

  4. Bring to a boil then simmer for about 10 minutes.

  5. In the meantime, chop the pound of mushrooms and saute in remaining T of olive oil until they release their liquid.

  6. Add mushrooms to vegetables and broth.

  7. Place in crockpot.

  8. Add 2 cups of water, turkey and rice.

  9. Cook on low all day.
