Recipe Ingredients for Turkey Quesadillas

1 lb extra lean ground turkey
1 onion
2 cloves garlic
1/2 tsp dried oregano
1 tsp cumin
1/2 tsp salt
1/2 tsp cayenne pepper
1 cup salsa
1 cup frozen corn
1 carrot, grated
1 red pepper, chopped
2 cups zucchini, grated
2 tbsp fresh cilantro, chopped
2 cups shredded mozzarella cheese
376 g whole wheat tortillas (8)

Recipe Directions for Turkey Quesadillas

  1. Scramble fry turkey, onion, and garlic. Add seasonings except cilantro.

  2. Add salsa, corn, pepper, zucchini and simmer until soft.

  3. Add carrot and cilantro.

  4. Sprinkle 2 tbsp cheese on half tortilla. Top with generous 1/2 cup filling and another 2 tbsp cheese. Fold over tortilla.

  5. Bake on cookie sheets at 400 degrees for few minutes and turn. Serve with sour cream or yogourt and salsa.
