Recipe Ingredients for Turkey Pumpkin Chili

2 tablespoons extra-virgin olive oil
1 small yellow onion (chopped)
1 green bell pepper (cored, seeded and chopped)
3 cloves garlic (chopped)
1 lb. lean ground turkey (7% fat)
14 1/2 oz. canned diced tomatoes (with chili peppers)
15 oz. pumpkin (puree)
1 cup water
1/2 tablespoon chili powder
1/2 tablespoon smoked paprika
1 teaspoon ground cumin
15 oz kidney beans (red; low sodium)
2 tablespoons fat free sour cream

Recipe Directions for Turkey Pumpkin Chili

  1. Pour olive oil into dutch oven

  2. Chop the onion, the garlic and the bell pepper add to the dutch oven

  3. Cook over medium heat until tender

  4. Add the turkey and cook until browned

  5. Add tomatoes containing the chilies, pumpkin, water, chili powder and smoked paprika; bring to boil

  6. Reduce heat and add the beans

  7. Add Salt and Pepper to taste

  8. Cover and simmer, stirring occasionally, for 30 minutes

  9. Serve hot
