A great option for leftover turkey meat!

Recipe Ingredients for Turkey Pot Pie

2 lbs cooked turkey meat
2 cans cream of chicken soup, 98% fat free
8 oz carrots (canned)
8 oz green beans (frozen or canned)
4 oz peas (frozen or canned)
4 oz corn (frozen or canned)
8 oz mushrooms (canned)
2 Pillsbury pie crusts

Recipe Directions for Turkey Pot Pie

  1. Spray bottom of pie pan with cooking spray.

  2. In bowl, mix together all ingredients except the pie crusts. Be sure to drain all liquid from veggies if using canned.

  3. Place first pie shell into bottom of pan. Press it down to fit to the bottom of the pan. Be sure sides of shell are resting over the edge of the pie pan.

  4. Pour filling into pie shell.

  5. Place second pie shell on top of filling.

  6. Mold the shell together with the bottom shell. Pinch/Crimp all edges together using a pinching technique with your fingers and thumb.

  7. Make sure the shells are sealed all the way around the pie.

  8. Cut 1/4" slits in the center of the pie shell and out toward the sides of the shell. Use a decorative pattern so the slits look uniform.

  9. Cover the outside edges of the crust with aluminum foil.

  10. Put pie on top of a baking sheet (to catch any overflow).

  11. Bake at 375 degrees for 25 minutes.

  12. Remove foil and continue cooking for another 10-15 minutes, or until pie crust is golden brown and you can see the filling bubbling through the slits on the top of the crust.

  13. Remove from the oven and let stand for 10 minutes before serving.
