Turkey Pie Recipe

A great way to repurpose leftover turkey from Thanksgiving. Can be frozen for a last-minute dinner option. Using only one crust seriously cuts down on calories!

Recipe Ingredients for Turkey Pie

2 cups whole wheat flour (plus more for dusting)
3/4 cup light cream cheese
3/4 cup Promise light spread
2 tsps dried thyme, divided
2 tsps dried marjoram, divided
2 tsps black pepper, divided
1 tsp celery seed
2 1/4 cups turkey meat, breast and dark meat, cooked
1 cup frozen peas
1 cup frozen corn
6 oz baby carrots, cut into 1/2" pieces
2 small white potatoes, parboiled and diced
2 turnips, diced
2 small cooking onions, diced
4 cups turkey gravy

Recipe Directions for Turkey Pie

  1. Preheat oven to 400 degrees F.

  2. For the crust, cut together whole wheat flour, cream cheese, Promise, salt, and half the seasonings, until it forms coarse crumbs.

  3. Form dough into a ball and refrigerate for at least 30 minutes.

  4. While the dough is cooling, make the pie filling.

  5. Combine remaining seasonings, turkey, vegetables, and gravy in a medium pot. Cook until vegetables are thawed and carrots are softened, about 20 minutes.

  6. Pour turkey mixture into two 9" pie plates and spread out evenly. Set aside to cool.

  7. Remove dough from refrigerator and divide into two.

  8. Roll out both dough balls onto a floured surface.

  9. Place crusts over prepared pie plates. Press down edges and decorate with a fork, if desired.

  10. Poke holes in the pie crust for ventilation.

  11. Bake pies for 30 minutes, or until crust is golden brown.

  12. Allow to cool for 5 minutes, then serve.
