Thanksgiving leftover soup made with turkey and lots of veggies

Recipe Ingredients for Turkey Noodle Soup with Veggies

6 cup Chicken Stock
2 1/2 cup Potatoes, Boiled
1 cup, chopped Carrots
1 cup, sliced Onions
1/2 cup Leeks, (Bulb And Lower Leaf-portion)
1/2 cup, diced Celery
1/2 cup, chopped Peppers, Sweet, Red
1 cup, diced Mushrooms, Portabella
1 cup Orecchiette

Recipe Directions for Turkey Noodle Soup with Veggies

  1. Take turkey carcass and what ever is left on the bones and boil with whatever you want to make the stock. Remove the big items and strain into a large Dutch oven.

  2. Chop carrots and potatoes and to Dutch oven and bring to a low boil; boil for eight minutes; and pasta continue to boil for another five minutes.

  3. Chop remaining ingredients except for turkey, add and boil for another five minutes. Dice leftover turkey and add at the end; return to a boil and remove from heat.
