Turkey Noodle Casserole Recipe

A lower-calorie creation based on my Mother's.

Recipe Ingredients for Turkey Noodle Casserole

1 lbs turkey
1 onion
2 celery stalks
1 red bell pepper
15 oz tomatoes
1/2 cup plain yogurt
2 tbls flour
1/4 lb bacon
1/2 lb egg noodles
1 can broth
1/2 cup bread crumbs

Recipe Directions for Turkey Noodle Casserole

  1. Cook the bacon and turkey

  2. Add 2 Tbls flour, then 1 onion, 2 stalks celery, 1 red bell pepper and cook until veggies are soft-ish

  3. Add 1 can diced tomatoes, 1/2 cup plain yogurt and 1 can chicken stock ? reduce for ~10-15 minutes (Also add any spices you'd like, I use a little seasoning salt, pepper, and red pepper flakes)

  4. Cook the egg noodles until al dente during the rest of the cooking.

  5. Pour noodles and turkey mix into casserole dish and top with 1/2 cup bread crumbs ? Bake for 20-30 minutes at 350.
