A healthier version of the traditional meat loaf meal.

Recipe Ingredients for Turkey and Mushroom Loaf

1 cup mushrooms
2 tablespoons safflower oil
1/2 cup onion
1 garlic clove
1/2 teaspoon thyme
2 pounds turkey
3 slices wheat bread
1/3 cup fat free milk
2 eggs
1 teaspoon parsley
1/4 teaspoon Worcestershire sauce

Recipe Directions for Turkey and Mushroom Loaf

  1. Preheat oven to 350.

  2. Process bread in food processor to make bread crumbs. Heat oil in a heavy skillet, add onions and garlic and saute about 3 minutes. Add mushrooms and thyme and cook until mushrooms are tender, stirring often. Let cool in a large mixing bowl.

  3. When cool, add turkey, bread crumbs, milk, eggs, salt, pepper, Worcestershire sauce and parsley. Work the mixture with your hands until thoroughly blended. Pack the mixture into a 9"x5"x3" loaf pan. Place 2 bay leaves on top.

  4. Bake 1 1/4 hours. Let stand 15 minutes before serving.
