meatloaf modifed from south beach supercharged book to replace the mushrooms with tofu. I like this with marina sauce on the side, my husband likes it with ketchup. 15 oz northern beans is equaivalent to about 8 oz dry beans, which then need to be prepared.

Recipe Ingredients for Turkey meatloaf with white beans

1 tsp olive oil
1 1/4 lb extra lean ground turkey
14 oz lite tofu
15 oz northern beans
1 1/2 cup onion
1 tsp thyme
1/2 tsp cayenne pepper
1 tsp paprika
1 tsp black pepper
1 tsp italian seasoning
4 cloves garlic
1/2 cups eggbeaters
1/2 cup chopped parsley
8 tsp worcestershire
3 tsp dijon mustard

Recipe Directions for Turkey meatloaf with white beans

  1. Heat oil in frying pan. Add onion, garlic, thyme, paprika, and pepper. Cook for 5 minutes until onion is softened. Add beans, tofu and combine. Remove from heat and let cool.

  2. Combine cooled bean mixture with turkey, eggbeaters, parsley and 2 tsp worcestershire sauce. Mix well and form into loaf.

  3. Bake 50 minutes at 375. Brush with remaining worcestershire sauce and bake an additional 10-15 minutes.
