This recipe uses lentils instead of bread crumbs and not only that but it packs a full serving of veggies into each serving and it is ABSOLUTELY DELICIOUS!

Recipe Ingredients for Turkey Meatloaf (Veggies and lentils)

1 lb Ground Turkey Breast
1/2 cup red pepper, chopped
1/2 cup onion, chopped
1/2 cup carrot, chopped
6 cloves garlic
6 oz spinach, raw
1/4 cup romano cheese
1/4 cup red lentils, cooked
1 egg

Recipe Directions for Turkey Meatloaf (Veggies and lentils)

  1. In bowl combine turkey, egg and parmesan.Set aside. Cook lentils according to package directions and drain.

  2. In sautee pan spray with cooking spray and sautee garlic, onion , pepper, and carrot for about 5 minutes until tender.

  3. Steam, drain, and chop spinach.

  4. Add sauteed vegetables, lentils, and spinach to turkey mixture stirring after each addition.

  5. Press into loaf pan sprayed with cooking spray and bake for 35 minutes at 350 degrees.
