My favorite turkey meatloaf recipe. Based on my mom's old meatloaf recipe for ground beef, but with a bit of extra spice to give the milder turkey a bit more flavor. 12 servings assumes 4 quarter-pound servings per loaf.

Recipe Ingredients for Turkey Meatloaf

3 lbs Ground Breast of Turkey
12 slices whole wheat bread
6 eggs
1/2 c skim milk
28 oz diced tomatoes
4 oz tomato paste
1 cup diced celery
1/2 cup diced bell pepper
1 cup diced onion
2 tbsp Worcestershire sauce
1/2 tsp salt
1 tsp pepper
2 tbsp minced garlic
1 tbsp dried oregano
1 tbsp dried Basil
2 tbsp fresh minced cilantro
1/4 cup ketchup
1/4 cup salsa
1 tbsp Worcestershire sauce

Recipe Directions for Turkey Meatloaf

  1. Mix the 1/4 c ketchup, 4oz tomato paste, 1/2 c salsa, and 1tbsp Worcestershire sauce together and set aside.

  2. In a large mixing bowl, mix eggs, chopped vegetables, diced tomatoes, spices & Worcestershire, milk, and ground meat.

  3. using your hands, tear up the bread into small cubes and crumbs, and work into the meat mixture until completely blended, without overmixing the meat. (the meatloaf will be tough if you overwork the meat)

  4. Divide mixture into 3 loaf pans, and top with the ketchup/salsa mixture, making sure to spread completely over the tops of the loaves. (If you like a lot of sauce, make extra beforehand)

  5. Bake at 350 for an hour to an hour and a half, until done.

  6. 10 minutes before it's done, sprinkle tops with additional fresh chopped cilantro.
