Moroccan flavors are the inspiration for this meatloaf. Also makes great meatballs.

Recipe Ingredients for Turkey Meatloaf

1 1/4 pounds ground turkey
1 small onion, minced
1 large egg
1/4 cup cilantro, chopped
70 g pine nuts, toasted
80 g dried apricots, diced
40 g double fiber bread, chopped into breadcrumbs
1/2 tsp ground cumin
1/2 tsp salt

Recipe Directions for Turkey Meatloaf

  1. Mix all of the ingredients in a large bowl, taking care not to over-work the meat.

  2. Divide into 4 portions, shap into mini-loaves on a cookie sheet or put into mini-loaf pans.

  3. Cook at 350 for 30-40 minutes.

  4. Serve with lemon and cumin yogurt sauce.
